Nutrition 101 Candida Diet Lunch Recipes

If you’ve been diagnosed with candidiasis, you know how important it is to follow the Candida Diet properly in order to control your symptoms and rid yourself of the overgrowth in your body. Even still, following the strict guidelines for the Candida diet may seem a bit difficult and, for some, outright boring. The following are a few lunch recipes that are easy to create and that will leave you feeling full and satisfied despite your current food limitations.

Quick Chicken Soup

This simple chicken soup recipe is Candida diet friendly and is easy to make. You can pack it up for lunch or save it for dinner (or have it for both meals). Simply start with some vegetables that are diet-friendly, like zucchini, cauliflower, celery, onions, and cabbage. You can use whatever amounts you want based on the amount of soup you’d like to make, but since the vegetables are the highlight, you’ll want this to be a hearty soup. Place the veggies in a pot, cover them with water, and bring everything to a boil. Reduce the mixture to a simmer and let it go for about 10 minutes or until the vegetables feel tender. Once the veggies are prepared, you can season your soup with a little bit of tomato paste (if unsweetened), oregano, basic, or even thyme. Dried seasonings are fine but fresh will add more flavor. Add a little bit of cooked chicken or shredded beef as well as some salt and pepper. You’ll have a hearty and satisfying meal you can use a few times over.

Chicken and Zucchini Hamburgers

Blend one pound of chicken breast, a cup of chopped zucchini, a small piece of fresh ginger, a spring onion, about cup of coriander leaves, an egg, 3 T ground flaxseed, and 1 T coconut aminos in a food processor. Heat some coconut oil in a large frying pan and form your meat mixture into patties (you’ll get about 6). Fry the patties in the pan until they’re cooked through. It’ll take approximately 4 minutes on each side. Serve over a bed of lettuce and enjoy. This recipe is for those on stages 2 and 3 of the Candida diet – not stage 1.

Candida Friendly Tuna Salad

Tuna salad is a great meal for those on the Candida diet and offers a great protein punch. Combine 6 ounces of tuna (in water or olive oil, your choice), 4 large leaves of chopped butter lettuce, 2T of chopped shallots, 2T finely chopped bell peppers (red or orange), 1T capers, 2T hard boiled eggs, the juice from lemon, and a pinch of salt to taste. Mix all of the ingredients in a large bowl and enjoy as a salad. Sorry, no bread allowed!
